Kangaroo in Australia is not farmed & are responsibly sourced (known as harvesting) in small numbers at a time by skilled, qualified shooters to be processed & sold. This commercial harvesting is permitted in 6 of the 8 states and is strictly regulated & monitored to ensure conservation, animal welfare & health & safety standards are upheld.
This particular kangaroo is used for human grade consumption. My supplier sources the by-products straight from the abattoir.
